I fully agree with DarkHalo;

The Real Folk Blue part 2;

One hell of an ending to one hell of a series. Only one word could properly describe it and it is...'Bang'
* "What the H-E-double-Hell!?"

* "What the H-E-double-fried-Mozzerella sticks!?"

Trigun-Shaman King-Scryed

All shows without proper endings. but where the shows did cut were well done.
Cast in the name of God. Ye Not Guilty.

Full Metal Alchemist - though since the movies took place after, you really can't call it an end....

There's some other's that had good endings in the anime, but continued on in manga, so i don't know if i can really use those...

Actually, you already did. FMA is still going in the manga and is VERY different than the anime. After you get to a certain point, that is. And, no, that point is NOT where the anime ended, it's actually well beyond that point. The manga is superb, though, and well worth reading. www.onemanga.com has the whole thing, if you're interrested.
